Meet our Southold Shindig Oysters
Southold Shindigs are Eastern Oysters (Crassostrea Virginica) or Atlantic Oysters. They are “true oysters” native to the eastern seaboard of North America.
Like all oysters, Crassostrea virginica is a bivalve mollusk with a hard calcium-carbonaceous shell. This particular type of oyster has an important environmental value. One oyster can filter more than 50 gallons of water in 24 hours.
Southold Shindigs are grown in deep water in the center of Southold Bay. Their taste profile begins with a burst of brinines that quickly transitions to a smooth vignette with a hint of sweetness and mineral finish.
